Egg & Spinach Muffin

- 4 large Eggs, beaten
- A large Pinch of Salt
- 1/2 tsp Black Pepper
- 1/4 cup Fresh Spinach, Chopped
- 50 gms Cherry Tomatoes
- 1/3 cup Mozzarella Cheese
- 1 tbsp Virgin Olive Oil
Combine 4 large beaten eggs, a large pinch of salt, 1/2 teaspoon black pepper, 1/4 cup fresh spinach, 50 gms chopped cherry tomatoes, 1/3 cup Mozzarella cheese, and 1 tablespoon virgin olive oil in a mixing bowl, stir well, and pour into a muffin mould.
Bake for 20 minutes at 200°C and enjoy your freshly baked nutritious muffins!
